Quinoa & Kidney Bean Chili



Not gonna lie, this chili is fairly class!
Personally, I'm more of a sweet chili kinda person rather than a spicy chili so this chili has some sweetness and a bit of a kick from the chilli powder and paprika.
Tbh just experiment with whatever flavours you want and find out what your favourite combination is!


I love serving this chili with brown rice and half an avocado, in a buddha bowl sort of style! But serve this chili however you like, there are no rules!
I just think there's something so comforting about eating from a big bowl filled with warming and belly-hugging food!


Anyway, enough of me chattin'!
Here's the recipe:

Quinoa & Kidney Bean Chili

Ingredients:

  • 2 onions
  • 2 cloves garlic
  • 1 tin tomatoes
  • 1 tin red kidney beans
  • 1/4 cup quinoa
  • 2 tbsp brown sugar
  • Juice of 1/2 lemon
  • 1 tablespoon soy sauce
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon coriander
  • Pinch of salt
  • Glug of olive oil

Method:

  1. Cook the quinoa however you usually cook it. I normally do 1/4 cup quinoa in 1/2 cup water and let it cook for 15 minutes until the water is all absorbed. Once cooked, fluff the quinoa up with a fork. Set aside for later.
  2. Chop the onion and garlic.
  3. Cook the onion and garlic in the olive oil in a pot for 5 minutes on a medium heat.
  4. Add the spices, salt, soy sauce, and lemon juice. Lower the heat and cook for another minute.
  5. Add the tomatoes and sugar, and bring to the boil.
  6. Throw in the cooked quinoa and kidney beans (make sure the beans are rinsed!) and simmer the chili for 20 minutes. 
  7. While the chili is simmering, cook some brown rice if ya want.
  8. Serve the chili with some brown rice and avocado and enjoy!
  9. Tip: Use the same pot to cook the quinoa and the rice (obvs don't cook the two of them at the same time!) Don't bother cleaning the pot or getting another one lol, just make sure all the cooked quinoa is removed from the pot before you go boiling your rice!
