Butternut Squash and Sweet Potato Soup


This is probably my favourite soup ever.
Like ever.
It's so so nice and warming and comforting and flavoursome and basically just like a hug in a bowl!
If you're mad about butternut squash and sweet potatoes like me then this soup is defo for you!


I took the pictures for this blog post on the day that storm Ophelia hit Ireland ahaha the weather was so mank like so this soup was the best thing to have on a day like that!
This recipe makes quite a lot of soup too so it'll keep you going for ages! It's fierce handy if you have containers that you can bring soup into college/work/wherever you're going so then you'll have your lunch sorted for the next few days! Hashtag sorted!


This soup is ridiculously easy to make so you don't need to be stressing about not knowing how to chop an onion properly, it'll all get blended up in the end!
And this soup is very very quick to make too so that's good too!
Anyhoo, here's the recipe, I hope you like it!


Sweet Potato and Butternut Squash Soup

Ingredients:

  • 1 medium butternut squash, peeled and diced
  • 3 small sweet potatoes, peeled and diced
  • 1 carrot, peeled and chopped
  • 1 small onion, peeled and chopped
  • 1 clove of garlic, peeled and chopped
  • 2 tablespoons olive oil
  • 4 cups (about 900ml) vegetable broth
  • 1/4 cup (about 100ml) coconut milk
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon curry powder
  • 1/4 teaspoon salt

Method:

  1. Cook the onion, garlic, and carrot in a large pot with the olive oil over a medium heat for about 3 to 5 minutes.
  2. Next, add the butternut squash, sweet potatoes, and pour in the vegetable broth.
  3. Then add the spices and salt and bring the mixture to a boil. Once it has started to boil, cover and reduce to a simmer while allowing it to cook for about 20 minutes, or until the veg is very tender.
  4. Using a hand-blender, blender, food processor, or whatever ya got, blend the veg until a thick, smooth consistency is reached.
  5. Pour in the coconut milk and continue to blend until it is mixed thoroughly. Add more coconut milk if you want a thinner soup.
  6. Serve warm with bread/crackers/whatever you eat with your soup and enjoyyyy!
  7. To make the fancy drizzle on top of the soup that I did just for the photos: Mix together some plain soya yogurt and a drop of rice milk (or whatever plant-based milk you use) until it's a thick-but-not-too-thick consistency if that makes any sense ahaha! Drizzle on top of the soup and you're sorted! If you're feeling fancy you can dust the soup with a bit of paprika too, ooh la la look at you go!
